If you want to kick of your dinner party in style this simple cocktail recipe is guaranteed to impress.

Puree some raspberries with some caster sugar to start things going. So you can either use fresh or frozen ones, depending on the seasons. So this recipe literally takes minutes to prepare. So just crush. I’m adding enough sugar so it’s got a slightly sweet taste but you still want that kick of the raspberry taste as well. And then just pass this through a sieve to remove those seeds.

Now the best way to get the maximum juice out of the raspberries is to use a ladle just to push everything through. This makes plenty of puree to be used for the bellinis but any left over is delicious poured over ice-cream. And then all you need to do is take your champagne glass, fill by about a third of the amount of liquid that you’ll be using, and then for the best bit, the bubbles.

Just put a drop in to start with and give it a little stir, then just top up with the rest of the bubbles, as simple as that.
