Video Guide to Summer Baked Chicken
Summer baked chicken is the perfect one pot wonder and it's packed full of Mediterranean flavours. It's great for al fresco dining or the perfect family meal and it comes at a knock down price. And all it takes is these straight forward every day ingredients and 20 minutes in the oven. And if that's not reason enough to make it, it's dead easy as well. Let me show you how.
Browning the chicken
Start by browning four chicken legs in two tablespoons of olive oil. Leave the skin on if you want to get it golden and crispy.
Preparing the vegetables
Next in it's four baking potatoes, with the skin on, chopped into wedges. I use baking potatoes because you get more for your money. And then two large white onions that have been peeled and quartered, then just give it all a toss and keep going until everything is nicely browned. Then it's in with two peppers one red and one yellow for colour and sweetness, then two bay leaves, a large pinch of dried thyme, 8 peeled whole garlic cloves and about 70g of black olives. Don't you just love one pot cooking?
Into the oven
Then my work is done and it's over to a pre-heated oven, 200 degrees or gas mark 6. So there you go, easy and delicious. The chicken is going to be golden and juicy and the potatoes are going to be nice and soft in the middle and crispy on the outside. All those flavours are going to mingle together and there's no washing up. And 20 minutes later it's done.
Finishing touches
All it needs now is a quick spritz of lemon and throwing the lemon wedges in after you've squeezed them for more taste and colour, and a scattering of roughly chopped flat leaf parsley. So there you go, summer baked chicken perfect to take from the oven to the table. Everyone can dive in and help themselves and there's no fuss for the cook.
