How to cook rice

The easiest, foolproof way to cook rice is by the absorption method.

  • Allow 75g long grain or Basmati rice per person. Place the rice in a measuring jug and look at the measurement. You are going to add double this amount of water. Rinse the rice in a sieve under a running tap until the water runs clear.
  • Place the rice in a saucepan and add double the volume of water. Another good tip is that the water should be about a finger tip above the top of the rice.
  • Add a little salt if liked. Bring to the boil. Stir the rice, then cover with a tight-fitting lid and reduce the heat to a gentle simmer and cook for 10 minutes. Do not be tempted to remove the lid during cooking.
  • When cooked, remove the lid and the rice should be perfectly tender with all the water absorbed. Fluff up the grains with a fork before serving.
