Purple sprouting broccoli and roast tomatoes

Ingredients

  • 750g (1lb) purple sprouting broccoli
  • 400g (13oz) small tomatoes
  • olive oil
  • sea salt
  • freshly ground black pepper

Each serving contains 70 calories, 3g sugar, 3g fat, 0.5g saturates and 0g salt.

Method

Heat the oven to Gas 5, 190°C, 375°F.

Trim the ends off the purple sprouting broccoli.

Place the tomatoes on a non-stick baking tray, drizzle with olive oil, shake and
place in the oven to roast for 10 minutes.

Heat a pan of water and when boiling add the broccoli, cook for 3 minutes with a lid on, drain and serve with the tomatoes, lightly season and drizzle lightly with olive oil.
