Heat the sunflower oil in a large frying pan or work until smoking. Add the pre-cooked rice and the frozen peas, stir-fry for 3-4 minutes, then add the prawns and stir-fry for 1-2 minutes more.

Pour on the beaten egg and stir over the heat for 1 minute until the egg is lightly scrambled. Add the soy sauce, spring onions, and sesame oil, toss together and serve.

Cook's tip

You could replace the prawns with chopped ham, or even tofu pieces.
