Put the gin, white rum, sparkling wine, pineapple juice, pineapple and the chopped pulp of 3 passionfruit in a jug and stir well.
Add a pack of fresh mint sprigs. Just before serving, fill the jug completely with ice and pour into 8 tall glasses.
