Juice and zest 1 lime. Stir the zest into 200ml softly whipped double or whipping cream or 350g Greek yogurt, then spoon onto 8 meringue nests.
Deseed, peel, and chop 1 medium papaya, toss in the lime juice, pile onto the nests and serve scattered with some finely chopped and some small whole mint leaves and the fruit seeds scooped from 1 passion fruit.
