Pre-heat the grill to hot.
Toast the sliced bread for 2-3 minutes on each side until lightly coloured. Spread the goat's cheese evenly onto the toasted bread and season with black pepper. Top each with a slice of tomato, then season with salt.
Return to the grill for 1 minute, then transfer to a wooden serving platter. Garnish with each with a sprig of basil leaves. Serve immediately.
