Fruit bars with coconut recipe

Dried fruit and nut bars HERO

Place the cashews and ground ginger or cinnamon in a food processor and blitz until the nuts resemble breadcrumbs.

Add the dried fruits to the food processor and process until the mixture resembles a paste. You may need to add a little water - up to 2tbsp - to get the mixture to combine and form into a ball.

Line the base of a 900g (2lb) loaf tin with baking paper. Sprinkle 1tbsp of the coconut or sesame seeds over the base of the tin. Spread over the fruit and nut mixture, then sprinkle over the rest of the coconut or sesame seeds.

Cover with cling film and chill for an hour.

Cut into 5 bars to serve. These will keep for up to 3 days in the refrigerator. Alternatively, instead of serving in bars you can roll the mixture into balls, cover and chill as above.
