Heat a griddle pan over a medium-high heat.
Build the sandwiches by spreading half of the bread slices with butter. Top evenly with the turkey, then the Gruyere and finish with the ham.
Place the other slice of bread on top to make sandwiches. Toast on the griddle pan until marked on one side. Carefully flip and mark on the other side; the heat will melt the cheese inside. Slice in half and serve, stacked, on serving plates.
