Pour the gin, lemon juice, sugar syrup and blueberry juice into a cocktail shaker. Fill with ice, shake, then strain into achilled glass. If you don't have a cocktail shaker, use a glass jar with a tight-fitting lid instead. Top up the drink with the Champagne or sparkling wine. Garnish with lemon peel.
Cook's tip
Sugar Syrup: Mix both ingredients together and stir well until the sugar is completely dissolved. Keep in the fridge when not in use.
