Slap mint leaves to release flavour, tear and drop into a tall glass.
Pour in the lime juice, add the caster sugar & half fill the glass with crushed ice. Mix together to dissolve the sugar.
Top the glass with crushed ice, add the BACARDI rum and a dash of soda water. Stir and garnish with a mint sprig.
