How to make perfect crackling

 

Prepare and score your pork

I'm going to show you the perfect way to make pork crackling. You just need to bear in mind a few stages and then you really will have the ultimate pork roast. So what you want to do is take your pork joint. Pop it onto the board. And you want to take a little bit of kitchen towel and you want to dab the surface removing any excess moisture. This is allowing the skin to dry out so you really do give it the best chance to crackle. Have a look at your joint, if you want to add some more scorings to it what you want to do is take a really sharp knife and then you want to run the heel of the knife along the skin being careful not to cut yourself, and you take it down as far as the meat itself but not scoring into it.

Rub in the olive oil

Then you want to take some oil, light vegetable oil is perfect for this, pour a little bit over the joint itself and then using the palms of your hands, really massage it in to the scorings, like so, even over the actual meat itself at either end. Then take some fine sea salt and add a generous amount over the skin. And then again you're going to massage that in. You're trying to get it into the scored marks so that that will give you the ultimate crackling.

Into the oven

Place the pork in the roasting tin then pop it into a pre-heated oven at 220 to 230 degrees. Leave it there for 30 minutes, you'll see it starting to crackle up, and then remove your meat and let it rest for at least 10 minutes before you start to carve it. After resting your meat, ah look at that, remove it from the pan, pop it onto a chopping board, can you hear that? That is perfect crackling.

Slice it up

What you want to do is take a sharp knife and just slice it up, delicious.
