As well as using this milk to make oriental soups and curries, you can simmer it in a pan with fried garlic and chilli to dress up cooked rice mixed with lemon juice and blanched spring greens. Or, mix with some caster sugar and yogurt, or crème fraîche, and serve with fruit for a quick pud.
